Vatrushki with blueberries

Ingredients

Filling:

  • 150 gr of frozen blueberries

  • 2 tbl sp of chia seeds

  • 2 tbl sp of maple syrup

 

Dough:

  • 1/2 cup of almond meal

  • 1/2 cup of gluten free oat meal

  • 1/2 cup of gluten free brown rice flour

  • 4 tbl sp of any plant based milk

  • 2 tbl sp of maple/coconut syrup

  • 2 tbl sp of coconut oil

  • vanilla bean

  • 1/2 tea sp of baking powder

 

Preparation

Preheat oven to 180C.

 

Filling:

Defrost blueberries, place in blender with chia seeds and maple syrup, blend until smooth. Chia seeds will thicken it over time.

 

Dough:

Place all dough ingredients into large bowl and mix well. Linen a tray with baking paper. Form 8 ball, put on tray, shape small whole in the middle and place filling.

 

Place tray into the oven and bake for approx 20-25 minutes.
