Anzac cookies

Ingredients

  • 1 cup banana flour

  • 1 cup wheat Free rolled oats

  • 2 tablespoons date pure( blend dates with water until smooth )

  • 1/4 cup chia seeds

  • 1/4 cup shredded coconut

  • 1/2 cup sultanas

  • 150-grams coconut oil.

  • 1/2 tsp bicarb soda

  • 1/2 cup water

  • 2 tsp ground flax seeds

 

Preparation

 

Preheat oven to 180 C.

Mix flour, oats, chia seeds, shredded coconut, bicarb soda, sultanas in a bowl.

mix water with 2 tsp ground flax seeds and let to sit for 2 min.

mix wet and dry ingredients together.

On a lined baking tray, divide mixture into 20 free form cookies.

Bake for 12-15 mins

Enjoy warm or allow to cool and store in airtight container in the fridge( they will be not so crumbly).
