Ingredients 1 cup sprouted buckwheat flour 1 cup ground almonds 1/2 tsp baking powder 1 tsp ground cinnamon 1/2 tsp ground ginger 3 tbsp maple syrup 2 tbsp coconut oil 1/4 cup almond mylk Preparation Preheat the oven to 165C. In a large bowl combine the buckwheat flour, ground almonds, baking powder, ground cinnamon and ginger. Add to it the maple syrup, oil and almond mylk. Mix well to combine. Roll out the dough on a lightly floured surface to a thickness of 5mm. Cut out gingerbread men using the cutters and place on a tray lined with grease-proof paper. Bake in the oven for 10-15 minutes. Remove from the oven and allow to cool.
