Breakfast Muffins with carrot and apple

Ingredients: 1 1/2 cup of gluten-free oats flour 3/4 cup of green banana flour 3/4 cup of flax seed meal 1/2 tea spoon of baking soda 1/2 tea spoon of baking powder 5 pitted dates 1/4 cup of coconut or macadamia oil 1 1/2 cup of non-dairy milk (coconut, hemp, almond, cashew etc) 1 cup of grated apples 1 cup of grated carrots 1/2 cup of dried cranberries or raisins Preparation: Linen baking tray for 12 muffins with baking paper. Preheat oven to 180C. Mix all dry ingredients in large bowl. Blend non-dairy milk with pitted dates until smooth. Mix together with dried ingredients, carrot, apple, cranberries and oil. Split into 12 muffins and lay on the tray. Bake for approx 45 minutes.
